Chili

Ingredients:
2 lbs lean hamburger
Salt
Pepper
1 large onion, chopped
2 1/2 cups canned tomato juice + 1 can water
6oz can tomato paste + 2-3 cans of water
2 tsp cumin
1 tsp oregano
3-5 T chili powder
2 cans kidney beans

Salt and pepper meat and cook until pink. Add other ingredients. Cook 1 1/2-2 hours, slowly. Add beans and stir 'till heated through.

Cocoa Frosting

Ingredients:
3/4 cup cocoa
2 2/3 cup powdered sugar
6 T butter
5-6 T milk
1 tsp vanilla

Mix all ingredients together and serve as desired.

Poppy Seed Bread

Bread Ingredients:
3 cups flour
2 1/4 cup sugar
1/2 tsp salt
1 1/2 tsp baking powder
3 eggs
1 1/2 tsp vanilla
1 1/2 tsp almond extract
1 cup oil
3 T poppy seeds
1 1/2 cup milk

Mix ingredients together and bake at 350 degrees for 50-55 minutes. Makes 2 loaves.

Glaze Ingredients:
1/4 cup orange juice
1 tsp vanilla
1 tsp almond extract
1 tap butter extract
2/3 cup sugar

Mix in order given and bring to a boil. Brush over bread.

Dinner Rolls

Ingredients:
2 T yeast
1/2 cup water
1 tsp sugar
1/2 cup butter (1 stick)
3 eggs
1 tsp salt
1 cup warm water
4 1/2 cups flour
1/2 cup sugar

Mix yeast, 1/2 cup water and 1 tsp sugar and let rise. Add rest of ingredients. Roll out dough to 1/2" and cut in circles. Fold circles in half and let rise 1 hour. Optional: Before rolling and cutting the dough, you can put it in the fridge overnight. Bake at 375 degrees for 12 minutes.

Oatmeal Refrigerator Cookies by Lonnie May

Ingredients:
1/2 cup soft shortening
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 1/2 tsp grated lemon rind (important)
1 1/2 T molasses
1/2 tsp vanilla
3/4 cup + 2 T sifted flour
1/2 tsp soda
1/2 tsp salt
1 1/2 cups oats, rolled

Mix together shortening, sugars, egg, rind, molasses and vanilla thoroughly. Mix together flour, soda and salt and add to previous mixture. Add oats. Mix thoroughly with hands. Press and mold into a long smooth roll about 2 1/2" in diameter. Wrap in wax paper and chill until stiff (several hours). With a thin, sharp knife, cut in thin slices 1/8" - 1/16" thick. Place slices close together on non-greased baking sheet. Bake at 400 degrees for 8-10 minutes until lightly browned. Makes 4 dozen cookies.

Whole Wheat Pancakes

Ingredients:
3/4 cup wheat grain
1 cup milk
2 eggs
2 T sugar (substitution: honey)
1/2 tsp salt
1 tsp baking soda
2 tsp baking powder
1/4 cup oil (substitution: 1/4 cup sunflower seeds or walnuts)

Blend together wheat and milk for 4 minutes. Add in the rest of ingredients. Cook on medium heat.

Pie Crust

Ingredients:
3 cups flour
1 1/2 tsp salt
1 1/3 cup crisco
3 T water
1 T vinegar
1 egg

Sift together flour and salt. Cut in crisco. Mix together water, vinegar and egg. Add to flour mixture.

Makes 2 pie crusts.

Popcorn Balls

Ingredients:
2 cups unpopped corn
21 oz. marshmallows
1 cup butter

Pop corn and remove kernels. Melt marshmallows and butter in microwave. Stir in corn. Can add food coloring. Serve.

Best Chocolate Cake from Lonnie May

Cake Ingredients:
2 cups cake flour
2 cups sugar
1 tsp soda
1 tsp salt
1/2 tsp baking powder
3/4 cup water
3/4 cup buttermilk
1/2 cup shortening
2 eggs
1 tsp vanilla
4 oz unsweetened chocolate, melted and cooled

Mix all ingredients together and bake at 350 degrees for 30-35 minutes.


Sour Cream Frosting:
2 1/2 cups confectioners sugar
3/4 cup cake flour
1/2 tsp salt
1/3 cup butter, softened
2 tsp vanilla
1/3 cup sour cream

Mix ingredients together and spread on cake. Serve cold.

Spaghetti Pie from Constance

Ingredients:
8 0z. cooked spaghetti
2 eggs
1/2 cup Parmesan cheese

2 T butter
1 cup cottage cheese
1 lb hamburger, cooked
spaghetti sauce
mozzarella cheese, grated

Mix first 3 ingredients together and line in a pie pan. Mix the remaining ingredients together with enough sauce to cover the meat. Add to the pan and bake at 350 degrees for 20 minutes. Top with mozzarella the last 5 minutes.

Giant Raisin Oat Cookies

Ingredients:
3 cups sugar
1 1/3 cups light corn syrup
1 1/3 cups softened butter
8 egg whites (or 4 whole eggs)
2 tsp grated lemon peel (substitution: orange peel)
5 cups oat bran
4 cups oats
4 cups flour
2 cups raisins, or less
2 tsp baking soda

Mix all ingredients together and drop by scant 1/4 cup (ice cream scoop size). Gently press to make 3" circles. Bake 14-16 minutes at 350 degrees. Cool 1 minute and remove from pans.

Fudge Sauce #2

Ingredients:
1 cup sugar
1/3 cup cocoa
pinch of salt
4 T flour
1 T corn syrup
1 cup hot water
2 T butter
1 T vanilla

Mix together sugar, cocoa, salt and flour. Add syrup and water and bring to a boil. Stir in butter and vanilla. Serve hot or cold.

Fresh Fruit Dip

Ingredients:
1 small package instant lemon pudding
8 oz plain yogurt
2 cups milk

Mix all ingredients together and chill. Serve with fresh fruit.

Hot Fudge Sauce

Ingredients:
4 oz semi sweet chocolate chips
2 T butter
14 oz can sweetened condensed milk
1 tsp vanilla
dash of salt

Melt chocolate chips and butter on low temperature. Add milk, vanilla and salt. Cook 5 minutes stirring constantly. Serve over ice cream, cake or fruit.

Crepes

Ingredients:
1 cup + 1 T flour
3 eggs
3 T butter
1/2 tsp vanilla
1 1/2 cup milk

Mix flour, eggs, 1 T butter and 1/2 cup of milk. Add rest of milk, 1/2 cup at a time. Let sit 1/2 hour to overnight in the fridge. Add 2 tablespoons of melted butter. Cook in sauce pan over medium-high until brown underneath, then flip.

Zucchini Pancakes

Ingredients:
3 cups zucchini, grated (about 3 medium zucchinis)
1 tsp salt
3 eggs
1 cup feta cheese, grated
1 1/2 tsp fresh mint leaves, minced (substitution: 3/4 tsp dried mint)
3 T all purpose flour
pepper
butter

Mix zucchini with salt and let stand for 1 hour. Squeeze moisture from zucchini. Beat eggs; add zucchini, cheese, mint, flour and pepper to taste. Fry in butter, 1 tablespoon at a time, turning until brown on both sides. Makes about 18 pancakes.

Sweet Bread

Ingredients:
1 package active dry yeast (or 1 cake compressed yeast)
2 T water
2/3 cup scalded milk
sugar
2 3/4 cup sifted all purpose flour
3 eggs, beaten
1/4 tsp ground cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1/4 cup melted butter
sesame seeds
blanched almond halves

Dissolve yeast in the water (use very warm water for dry yeast or use lukewarm water for compressed.) Scald milk and cool to lukewarm. Combine yeast, milk and 1 tsp sugar in a large bowl. Sift in 1/2 cup flour. Stir until flour is dampened. Cover bowl with clean cloth and set in warm place for 1 hour.

Add remaining 2 1/4 cups flour, 1/2 cup sugar, 2 eggs and spices to melt butter and stir into dough. Put on a floured pastry board and knead until smooth and elastic. Place in an oiled bowl, turning dough to cover all sides with oil. Cover with a cloth and let rise in a warm place until doubled, about 1 1/2 hours.

Divide dough into thirds and roll each part into a strip about 18 inches long. Braid loosely on a greased cookie sheet. Cover with a cloth and let rise until doubled, about 1 hour. Brush with remaining beaten egg and sprinkle with sesame seeds. Arrange blanche almond halves in a decorative pattern on top. Bake in preheated moderate oven at 375 degrees for 25-30 minutes.

Texas Sheet Cake

Ingredients for Cake:
3 cups sugar
3 cups flour
3/4 tsp salt
1 1/2 tsp soda
1 1/2 cups butter (3 sticks)
1 1/2 cups water
6 T cocoa
3 eggs
3/4 cup sour cream or sour milk

Ingredients for Frosting:
1 1/2 sticks butter
6 T cocoa
9 T milk
1 T vanilla
5 1/4 cups powdered sugar

For cake: Combine sugar, flour, salt and soda in a bowl. Put butter, water and cocoa in a sauce pan and bring to a boil. Pour over dry ingredients. Add eggs and sour cream. Pour on a greased cookie sheet and bake at 400 degrees for 12-15 minutes.

For frosting: Melt together butter, cocoa, milk and vanilla. Add powdered sugar.

Spinach and Rice

Ingredients:
1 cup raw rice
1 medium onion, finely chopped
1/3 cup olive oil
2 cups boiling water
1 1/2 tsp salt
1 lb fresh spinach

Saute rice and onion in olive oil, stirring occasionally for 15 minutes. Add boiling water and salt. Simmer, covered, for 10 minutes. Meanwhile, wash spinach and cut into 1/2 inch lengths with scissors. Add to rice and mix thoroughly. Cover and continue to simmer, stirring occasionally, for 15 minutes longer. Makes 4 servings.

Banana Bread

Ingredients:
1 cup sugar
1 egg
3 crushed bananas
1/4 cup butter
1 1/2 cups flour
1 tsp soda
1 tsp salt
1 cup walnuts, chopped

Mix together all ingredients and bake at 375 degrees for one hour (for muffins bake at 300 degrees for 20 minutes)

Apple Cobbler from Lonnie May

Crust Ingredients:
2 cups flour
1 tsp salt
2 tsp baking powder
3/4 cup shortening
1/2 cup milk

9-10 apples, sliced and peeled

Syrup Ingredients:
1 3/4 cup sugar
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 cup butter (1 stick)

Cut together flour, salt, baking powder and butter. Add milk. Roll out half of dough and place in a baking dish. Add 9-10 sliced, peeled apples to dish. Roll out rest of dough and place on top. Cut in slits. Mix together syrup ingredients and pour over pie.

Bake at 375 degrees for 45 minutes.

Brownies

Ingredients:
3/4 cup cocoa
2/3 + 1/4 cup shortening
2 cups sugar
4 eggs
1 tsp vanilla
1 1/4 cup flour
1 tsp baking powder
1 tsp salt
1 cup chocolate chips

Melt together cocoa and shortening in a sauce pan. Add the rest of the ingredients.

Put in a 13 x 9 pan and bake at 350 degrees for 30 minutes or less.

Buttermilk Pancakes

Ingredients:
1 cup buttermilk
1/4 tsp soda
3/4 cup flour
1 T sugar
1/4 tsp salt
1/4 tsp baking powder
1 egg
2 T oil (substitution: melted crisco)

Mix together buttermilk and soda. Let stand 3 minutes. Add to the rest of the ingredients. Cook over medium heat.

Apricot Squares

Ingredients:
2 cups flour
1 tsp salt
8 oz. cream cheese
1/2 lb butter (2 sticks)
1 T milk
1 T vinegar

12 oz. dried apricots
2 cups water
1 1/2 cups sugar

powdered sugar
water

Cut flour, salt, cream cheese and butter together like a crust. Stir in milk and vinegar. Divide dough into 4 balls and chill for 2 hours. Bring apricots, water and sugar to a boil. Take off heat and let stand until cool. Drain.

Roll dough out and cut into 2 inch squares. Place apricot in the middle and fold up corners.

Bake at 400 degrees for 15 minutes.

Mix together powdered sugar and water. Drizzle over the tops of the squares.

Carmel Sauce

Ingredients:
1/2 cup brown sugar
1/2 cup sugar
1/2 cup butter (1 stick)
1/2 cup cream
1/2 tsp vanilla

Bring sugars, butter and cream to a boil then add vanilla.

Great for cake, apple dip or ice cream.

German Apple Cake

Ingredients:
2 eggs
1 cup oil (substitution: 1 cup applesauce or 1 cup half & half)
1 1/2 cups sugar
2 tsp vanilla
2 cups flour
2 tsp baking soda
1 tsp salt
1 1/2 tsp cinnamon
4 cups apples, peeled and chopped (recommend Golden Delicious Apples)
1 cup walnuts, chopped

Mix all ingredients together and bake at 350 degrees for 45 minutes.
Serve with Carmel Sauce (see recipe)
